
This is a very simple, 6-ingredient recipe that is easy to throw together if you need something to bring to a get-together, Thanksgiving, or to just enjoy yourself!
Ingredients:
- 1 1/2 cups chopped pecans
- 1/2 cup unsalted butter at room temp
- 1/2 cup white granulated sugar
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 1/4 cups all-purpose flour
Directions:
- Preheat oven to 350°F
- Line 2 baking sheets with parchment paper
- Beat butter, 1/4 cup sugar (save the rest for late), vanilla, and salt on medium for 2 minutes
- Reduce speed to low and beat in the flour a little bit at a time until combined
- Beat in 1/2 cup of chopped pecans until incorporated (save the rest for later)
- Cover the bowl and refrigerate for 1-2 hours
- Place the rest of your sugar in a small bowl
- Roll the dough into 1 inch balls
- Roll in the sugar
- Place on parchment paper about 2 inches apart, press down slightly
- Press the remaining chopped pecans onto the tops
- Bake at 350°F for 15-17 minutes
- Rotate the pans halfway through
- Let cool for at least 5 minutes
- Enjoy!
