Pecan Shortbread Cookies

This is a very simple, 6-ingredient recipe that is easy to throw together if you need something to bring to a get-together, Thanksgiving, or to just enjoy yourself!

Ingredients:

  • 1 1/2 cups chopped pecans
  • 1/2 cup unsalted butter at room temp
  • 1/2 cup white granulated sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/4 cups all-purpose flour

Directions:

  • Preheat oven to 350°F
  • Line 2 baking sheets with parchment paper
  • Beat butter, 1/4 cup sugar (save the rest for late), vanilla, and salt on medium for 2 minutes
  • Reduce speed to low and beat in the flour a little bit at a time until combined
  • Beat in 1/2 cup of chopped pecans until incorporated (save the rest for later)
  • Cover the bowl and refrigerate for 1-2 hours
  • Place the rest of your sugar in a small bowl
  • Roll the dough into 1 inch balls
  • Roll in the sugar
  • Place on parchment paper about 2 inches apart, press down slightly
  • Press the remaining chopped pecans onto the tops
  • Bake at 350°F for 15-17 minutes
  • Rotate the pans halfway through
  • Let cool for at least 5 minutes
  • Enjoy!

Makes about a dozen and a half cookies

Recently, I decided to make these sugar-free by simply replacing the granulated sugar to a sugar substitute.
